For the Liquid Components
  • ½ cup Chicken Broth Substitute with vegetable broth for vegetarian.
  • ½ cup Heavy Cream/Evaporated Milk Can replace with coconut milk for a dairy-free alternative.
Seasoning & Garnish
  • 1 tsp Salt Season to taste.
  • ½ tsp Black Pepper
  • Fresh Cilantro For garnish.
For Serving
  • Cooked White Rice/Quinoa/Fried Plantains Choose based on dietary preferences.

Step‑by‑Step Instructions
  1. Prepare Chicken: Season chicken with salt and black pepper, then let rest for 10 minutes.
  2. Sear Chicken: Heat 1 tablespoon olive oil, sear chicken for 4-5 minutes on each side until golden brown, then set aside.
  3. Sauté Aromatics: In the same skillet, add remaining olive oil, sauté onion until translucent, then add garlic and cumin for 1 minute.
  4. Make Sauce: Stir in ají amarillo paste, cook for 2 minutes, add broth, simmer, then add cream to thicken the sauce.
  5. Combine: Return chicken to the skillet, simmer together for 5 minutes, taste and adjust seasoning if needed.
  6. Serve: Garnish with cilantro and serve with rice, quinoa, or plantains.
