- Preheat your oven to 400°F (200°C).
- Wash and peel (if desired) the sweet potatoes, then cut them into 1/2-inch thick rounds.
- In a large mixing bowl, combine melted butter, cinnamon, salt, and pepper. Toss sweet potato slices until coated.
- Line a baking sheet with parchment paper and arrange the sweet potato slices in a single layer.
- Roast for 25-30 minutes until tender and caramelized.
- Prepare the topping by mixing maple syrup, chopped walnuts, cinnamon, and thyme in a bowl.
- Once roasted, remove sweet potatoes from oven and top with the maple-walnut mixture. Return to oven for 8-10 minutes.
- Serve hot, optionally garnished with crumbled feta cheese.
