Step-by-Step Instructions
  1. Rinse Jasmine rice under cold water until clear, then combine with 1.5 cups of water in a saucepan. Bring to a boil, then cover and simmer for about 15 minutes.

  3. Pour in coconut milk and lime juice into the skillet, stir to combine, and simmer for 3-4 minutes.
  4. Gently place fish fillets into the skillet, cover, and cook for about 5-7 minutes until opaque.
  5. Remove from heat, stir in chopped cilantro, and serve over Jasmine rice.
