Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
In a large mixing bowl, whisk together the eggs until well beaten.
Add the cottage cheese, shredded cheddar cheese, diced bell peppers, green onions, garlic powder, salt, black pepper, and paprika (if using) to the eggs. Mix until all ingredients are well combined.
Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and lightly golden on top.
Allow the egg bites to cool for a few minutes before carefully removing them from the muffin tin. Serve warm or let cool completely and store in the refrigerator.
