Ingredients
  

  • 2 tablespoons butter
  • 2 12-ounce packages frozen corn
  • 1 package ranch seasoning mix
  • 1 8-ounce package cream cheese, cubed
  • 1 cup bacon bits or 4 strips cooked bacon chopped
  • 2 cups shredded cheddar Jack cheese divided

Method
 

  1. Preheat Oven:Preheat your oven to 350°F (175°C).
  2. Sauté the Corn:In a large skillet over medium heat, melt the butter. Add frozen corn and cook until softened, about 5–7 minutes.
  3. Make It Creamy:Stir in the cubed cream cheese and cook, stirring frequently, until the cheese has melted and combined with the corn.
  4. Add the Flavor:Sprinkle in the ranch seasoning and stir in the chopped bacon. Mix well to distribute everything evenly.
  5. Cheese It Up:Remove the skillet from heat and stir in 1 cup of shredded cheddar Jack cheese.
  6. Bake the Casserole:Transfer the mixture to a greased baking dish. Top with the remaining 1 cup of cheese.

Notes

  • Fresh or canned corn can be used in place of frozen—just adjust sauté time accordingly.

  • For crispier bacon texture, reserve some to sprinkle on top after baking.
