Preparation Steps
  1. Bring 4 cups of water to a boil in a medium saucepan. Stir in 1 cup of stone-ground grits, cover and simmer.
  2. Sauté 1 diced onion, 1 minced garlic clove, and 1 chopped bell pepper in a large skillet with 1 tablespoon of butter until soft.
  3. Add 1 pound of crawfish tails and 2 teaspoons of Cajun seasoning to the skillet, cook until heated through.
  4. Serve a generous portion of grits topped with the crawfish mixture, garnish with green onions and parsley.
