Ingredients
  

  • 2 medium zucchinis sliced into rounds
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 cup cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup chopped fresh parsley for garnish

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes. Season with Italian seasoning, salt, and black pepper.
  4. In a large mixing bowl, combine the sliced zucchinis, cottage cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Mix well.
  5. In a greased 9x13-inch baking dish, layer the zucchini mixture evenly on the bottom. Top with the cooked chicken.
  6. Sprinkle the remaining mozzarella and Parmesan cheeses over the chicken.
  7. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  8. Remove from the oven and let it cool for a few minutes. Garnish with chopped parsley before serving.
