Preparation Steps
  1. In a medium saucepan, whisk together the eggnog and cornstarch until smooth.
  2. Place the saucepan over medium heat, stirring frequently to prevent sticking.
  3. Once warmed, gradually add the sugar, cinnamon, and nutmeg while stirring.
  4. Stir for 5-7 minutes until thickened.
  5. Reduce heat and stir in the butter until melted.
  6. Mix in vanilla extract and dark rum (if desired) and cook for 2-3 minutes.
  7. If using, whisk in powdered pectin and allow to cook for another 1-2 minutes.
  8. Remove from heat and let cool for 5-10 minutes before transferring to jars.
