Preparation Steps
- In a medium saucepan, whisk together the eggnog and cornstarch until smooth.
- Place the saucepan over medium heat, stirring frequently to prevent sticking.
- Once warmed, gradually add the sugar, cinnamon, and nutmeg while stirring.
- Stir for 5-7 minutes until thickened.
- Reduce heat and stir in the butter until melted.
- Mix in vanilla extract and dark rum (if desired) and cook for 2-3 minutes.
- If using, whisk in powdered pectin and allow to cook for another 1-2 minutes.
- Remove from heat and let cool for 5-10 minutes before transferring to jars.
