Ingredients
  

  • 2 large chicken breasts about 1 pound, boneless and skinless
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup cherry tomatoes halved
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh basil chopped (optional)

Method
 

  1. Begin by seasoning the chicken breasts with garlic powder, onion powder, salt, and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the cherry tomatoes and sauté for 2-3 minutes until they begin to soften.
  4. Add the fresh spinach to the skillet and cook until wilted, about 1-2 minutes.
  5. Reduce the heat to medium-low and pour in the heavy cream, stirring to combine.
  6. Add the grated Parmesan cheese and Italian seasoning, stirring until the cheese is melted and the sauce is creamy.
  7. Return the cooked chicken to the skillet, spooning the sauce over the chicken. Let it simmer for an additional 2-3 minutes to heat through.
  8. If desired, garnish with fresh basil before serving.
