  2. Next, take your cucumber and slice it lengthwise. If desired, scoop out the seeds using a spoon for a less watery texture. Then cut the cucumber into half-moon shapes.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, finely diced dill, honey, salt, and black pepper. Mix until well combined.
  4. In a large mixing bowl, gently combine the freshly sliced fennel and cucumber. Toss them lightly to mix.
