Ingredients
  

  • 2 medium zucchinis grated
  • 1 teaspoon salt
  • 1 cup cottage cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes optional
  • 8 spring roll wrappers
  • Cooking spray

Method
 

  1. Place the grated zucchini in a colander, sprinkle with salt, and let it sit for about 15 minutes to draw out excess moisture. After 15 minutes, rinse the zucchini under cold water and squeeze out as much liquid as possible using a clean kitchen towel.
  2. In a large bowl, combine the drained zucchini, cottage cheese, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, black pepper, and red pepper flakes (if using). Mix until well combined.
  3. Lay a spring roll wrapper on a clean surface. Place about 2 tablespoons of the zucchini mixture in the center of the wrapper. Fold the bottom over the filling, then fold in the sides, and roll tightly to seal. Repeat with the remaining wrappers and filling.
  4. Preheat the air fryer to 375°F. Lightly spray the spring rolls with cooking spray to help them crisp up.
  5. Place the spring rolls in a single layer in the air fryer basket. Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  6. Serve warm with your favorite dipping sauce.
