Cooking Steps
  1. Boil water and soak chow mein egg noodles for 30 seconds to 1 minute until softened. Drain and set aside.
  2. Whisk together dark soy sauce, regular soy sauce, oyster sauce, fish sauce, granulated sugar, and water in a small bowl.
  3. Heat 1 tablespoon of corn oil in a wok over medium-high heat. Sauté yellow onion and the white parts of green onions for about 1 minute until translucent.
  4. Add another tablespoon of corn oil in the same wok, add soaked noodles, spreading evenly, let crisp for 2 minutes. Flip and crisp for an additional 2 minutes.
  5. Add sautéed onions, green onion tops, and bean sprouts to the noodles. Pour sauce over and stir-fry for 1-2 minutes.
  6. Remove from heat, drizzle sesame oil, combine well, and serve hot.
