Step-by-Step Instructions

  3. Whisk egg in a bowl; mix almond flour, Parmesan, Italian seasoning, and garlic powder in another.
  4. Dip each zucchini slice in egg and then coat with the flour mixture.
  5. Arrange coated zucchini on a wire rack or parchment-lined baking sheet. Preheat oven to 425°F (220°C).
  6. Bake for 15-20 minutes until golden brown, flipping halfway if needed.
  7. For air frying, preheat to 400°F (200°C) and cook for 10-12 minutes, flipping halfway.
  8. Top each cooked zucchini slice with marinara, mozzarella, and mini pepperoni.
  9. Return to the oven or air fryer for an additional 5 minutes until cheese is melted.
