  • 1 tsp Rock Salt
  • 1 tsp Toasted Garlic Salt Use regular salt if garlic salt isn't available
  • 1 tsp Smoked Paprika Sweet paprika can be used for a milder taste
  • 1 tsp Pepper Adjust according to preferences
For Frying and Serving
  • 100 ml Extra Virgin Olive Oil Best choice for frying
  • 1 Lemon Wedges For serving
  • 2 tbsp Chopped Parsley For garnish

Method
 

Step-by-Step Instructions
  1. In a plastic bag or bowl, combine plain flour, rock salt, toasted garlic salt, pepper, and smoked paprika. Mix well.
  2. Add butterflied sardines to the bag, shaking gently to coat them in the flour mixture.
  3. Pour enough olive oil into a frying pan to cover the bottom, about 1/4 inch deep, and heat over medium until it reaches 350°F (175°C).
  4. Carefully place sardines skin-side down in the hot oil, frying for 1-2 minutes until crisp and golden brown. Flip and cook for another 1-2 minutes.
  5. Remove sardines with a slotted spatula and drain on paper towels.
  6. Plate the sardines, garnish with chopped parsley and serve alongside lemon wedges.
