- In a plastic bag or bowl, combine plain flour, rock salt, toasted garlic salt, pepper, and smoked paprika. Mix well.
- Add butterflied sardines to the bag, shaking gently to coat them in the flour mixture.
- Pour enough olive oil into a frying pan to cover the bottom, about 1/4 inch deep, and heat over medium until it reaches 350°F (175°C).
- Carefully place sardines skin-side down in the hot oil, frying for 1-2 minutes until crisp and golden brown. Flip and cook for another 1-2 minutes.
- Remove sardines with a slotted spatula and drain on paper towels.
