  1. Start by mashing one large avocado in a bowl. Season it well with kosher salt and pepper to taste. The avocado should be creamy and smooth.
  2. Lay an egg roll wrapper flat on a clean surface, and spread a generous layer of jalapeño cream cheese in the center, followed by a spoonful of mashed avocado, cooked rice, and imitation crab.
  3. Wet the edges of the wrapper with a little water, fold the top corner over the filling, then fold the sides inward and roll tightly downward.
  4. Fill a deep saucepan with enough vegetable oil to heat over medium heat to 350°F.
