  • 2 cups Shredded mozzarella cheese or dairy-free options
For the Fillings
  • 1 cup Pepperoni slices or diced cooked ham or vegetables like mushrooms or spinach
  • 1 cup Chopped bell peppers any variety, or substitute with zucchini
  • 1 teaspoon Dried oregano or fresh oregano/Italian seasoning
For Finishing Touches
  • 2 tablespoons Olive oil or melted butter
  • Optional garnishes Grated parmesan, red pepper flakes, or fresh basil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Spread a thin layer of pizza sauce evenly across each tortilla.
  3. Sprinkle shredded mozzarella cheese over the sauce and add your desired toppings.
  4. Roll each tortilla tightly into a log and slice into 1-inch thick pieces.
  5. Place the sliced rolls cut-side up on the prepared baking sheet and brush with olive oil.
  6. Bake in the oven for 10-12 minutes until golden brown and the cheese is bubbling.
  7. Remove from the oven and let cool shortly before adding garnishes and serving.
