Ingredients
  

  • 1 cup cooked quinoa
  • 1 cup black beans drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/2 cup grated carrots
  • 1/2 cup finely chopped bell pepper any color
  • 1/4 cup finely chopped onion
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 2 tablespoons olive oil for cooking

Method
 

  1. In a large bowl, mash the black beans with a fork until mostly smooth.
  2. Add the cooked quinoa, breadcrumbs, grated carrots, bell pepper, onion, garlic, cumin, smoked paprika, salt, and black pepper. Mix well until all ingredients are combined.
  3. Add the egg to the mixture and stir until fully incorporated. If the mixture is too wet, add a little more breadcrumbs until it holds together.
  4. Divide the mixture into 4 equal portions and shape each portion into a patty.
  5. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, or until golden brown and crispy.
  6. Serve the veggie burgers on buns with your favorite toppings, such as lettuce, tomato, avocado, or sauce.
