Ingredients
  

  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 4 slices of thick bread such as Texas toast or brioche
  • 1 cup Fruity Pebbles cereal
  • 2 tablespoons butter
  • Maple syrup for serving

Method
 

  1. In a shallow bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.
  2. Place the Fruity Pebbles in a separate shallow dish.
  3. Dip each slice of bread into the egg mixture, ensuring both sides are coated. Let any excess drip off.
  4. Press each slice of coated bread into the Fruity Pebbles, making sure to cover both sides evenly.
  5. In a large skillet, melt 1 tablespoon of butter over medium heat. Once melted, add two slices of the coated bread to the skillet.
  6. Cook for 2-3 minutes on each side, or until golden brown and crispy. Repeat with the remaining butter and bread slices.
  7. Serve warm with maple syrup drizzled on top.
