Step-by-Step Instructions
  1. Combine the 7-grain cereal and large-flake rolled oats in a mixing bowl. Pour in 1½ cups of boiling water and stir gently. Allow to rest for about 10 minutes.
  2. Once cooled, sprinkle in the yeast, whole wheat flour, sweetener, ground flax seed, oil, and salt. Mix until a thick dough forms.
  3. Fold in mashed banana and walnuts. Gradually add unbleached all-purpose flour until a moist dough forms.
  4. Cover the bowl and let the dough rise in a warm area for about 45 minutes or until it doubles in size.
  5. Preheat your oven to 375°F (190°C) and prepare baking sheets.
  6. Punch down the risen dough, divide into 10 portions, and shape each into a round about 1/4-inch thick.
  7. Create dimples on the tops and lightly brush with water.
  8. Bake for 8 minutes, then flip and bake for another 5-7 minutes until golden brown.
