Preparation Steps
- In a small bowl, whisk together the cornstarch and water until smooth. Set aside.
- In a medium saucepan, combine coconut milk and sugar over medium heat. Stir until just about to boil, about 5 minutes.
- Gradually pour the cornstarch mixture into the saucepan while whisking constantly for 2-3 minutes as it thickens.
- Reduce heat to low and cook for 10-15 minutes, whisking frequently until pudding-like consistency.
- Pour the mixture into a greased 8x8 pan and cool for 15 minutes before refrigerating for 1-2 hours to set.
- Once set, cut into squares and serve, optionally in coconut shells or with fresh fruit.
