Step-by-Step Instructions for Marinated Tomato Sandwich
  1. Soak the cashews in boiling water for about 15 minutes.
  2. Blend the soaked cashews, pressed tofu, lemon juice and zest until smooth. Chill for 30 minutes.
  3. Mix sliced red onions with olive oil, vinegar, lemon juice, sumac, and parsley. Let marinate for 10-15 minutes.
  4. Slice heirloom tomatoes and drizzle with olive oil, garlic, and fresh herbs. Let sit for 5-10 minutes.
  5. Spread tofu mixture on one slice of bread, layer with marinated tomatoes, sumac onions, and lettuce. Top with another slice.
  6. Serve immediately for the best flavor experience.
