For the Pumpkin Bars
  • ½ cup Unsalted Butter Melted
  • 1 cup Light Brown Sugar
  • 1 large Egg or flax egg for vegan option
  • 1 teaspoon Vanilla Extract or almond extract
  • 1 cup Pumpkin Puree canned or fresh
  • 1 cup All-Purpose Flour or gluten-free flour
  • 1 teaspoon Ground Cinnamon preferably fresh
  • 1 teaspoon Ground Ginger
  • 1 teaspoon Ground Nutmeg
  • 1 teaspoon Baking Soda ensure fresh
  • ½ teaspoon Fine Sea Salt
For the Brown Sugar Frosting
  • ½ cup Unsalted Butter softened
  • 1 cup Light Brown Sugar
  • 2 cups Powdered Sugar adjust for desired consistency
  • 2 tablespoons Milk or plant-based milk
  • ½ teaspoon Vanilla Extract or almond extract

Method
 

Pumpkin Bars Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with foil or parchment paper.
  2. Melt ½ cup of unsalted butter until liquid, then let it cool slightly.
  3. Whisk in 1 cup of brown sugar, 1 egg, 1 teaspoon of vanilla, and 1 cup of pumpkin puree into the melted butter until smooth.
  4. In a separate bowl, mix 1 cup of flour, 1 teaspoon of cinnamon, ginger, nutmeg, baking soda, and salt.
  5. Fold the dry ingredients into the wet mixture until just blended.
  6. Pour the batter into the prepared pan and bake for 25 minutes or until a toothpick comes out clean.
  7. Meanwhile, prepare the frosting by beating together softened butter and brown sugar until creamy.
  8. Add powdered sugar, milk, and vanilla to the frosting mix until smooth.
  9. Once cooled, remove the bars and frost generously with the brown sugar frosting before cutting into bars.
