Pumpkin Bars Preparation
- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with foil or parchment paper.
- Melt ½ cup of unsalted butter until liquid, then let it cool slightly.
- Whisk in 1 cup of brown sugar, 1 egg, 1 teaspoon of vanilla, and 1 cup of pumpkin puree into the melted butter until smooth.
- In a separate bowl, mix 1 cup of flour, 1 teaspoon of cinnamon, ginger, nutmeg, baking soda, and salt.
- Fold the dry ingredients into the wet mixture until just blended.
- Pour the batter into the prepared pan and bake for 25 minutes or until a toothpick comes out clean.
- Meanwhile, prepare the frosting by beating together softened butter and brown sugar until creamy.
- Add powdered sugar, milk, and vanilla to the frosting mix until smooth.
- Once cooled, remove the bars and frost generously with the brown sugar frosting before cutting into bars.
