Method
 

Step-by-Step Instructions
  1. Rinse 1 pound of large shrimp under cold water, then pat them dry with a paper towel. Season with salt and pepper to taste.
  2. In a large skillet, pour in 2 tablespoons of olive oil and heat over medium-high heat. Allow to shimmer.
  3. Add 2 teaspoons of minced garlic and 1 teaspoon of minced ginger to the skillet. Sauté for about 1 minute.
  4. Carefully add the seasoned shrimp into the skillet. Cook for 2-3 minutes until they turn pink and opaque.
  5. Gently stir in 1 cup of diced fresh pineapple. Cook for about 1 minute.
  6. Pour in ¼ cup of sweet chili sauce and 1 tablespoon of soy sauce, stirring to coat everything evenly.
  7. Simmer for 2-3 minutes, allowing the sauce to thicken.
  8. Remove from heat and stir in the sliced green onions.
  9. Taste and adjust the seasoning as needed before serving.
  10. Serve hot, either on its own or over jasmine rice or in tortillas.
