- Rinse 1 pound of large shrimp under cold water, then pat them dry with a paper towel. Season with salt and pepper to taste.
- In a large skillet, pour in 2 tablespoons of olive oil and heat over medium-high heat. Allow to shimmer.
- Add 2 teaspoons of minced garlic and 1 teaspoon of minced ginger to the skillet. Sauté for about 1 minute.
- Carefully add the seasoned shrimp into the skillet. Cook for 2-3 minutes until they turn pink and opaque.
- Gently stir in 1 cup of diced fresh pineapple. Cook for about 1 minute.
- Pour in ¼ cup of sweet chili sauce and 1 tablespoon of soy sauce, stirring to coat everything evenly.
- Simmer for 2-3 minutes, allowing the sauce to thicken.
- Remove from heat and stir in the sliced green onions.
- Taste and adjust the seasoning as needed before serving.
- Serve hot, either on its own or over jasmine rice or in tortillas.
