Preheat oven to 375°F (190°C).
In a bowl, combine breadcrumbs and milk. Let soak for 5 minutes.
Add ground meat, onion, garlic, eggs, Worcestershire sauce, ketchup, mustard, Parmesan, parsley, paprika, oregano, salt, and pepper. Mix gently until just combined (don’t overmix).
Form mixture into a loaf shape and place on a parchment-lined baking sheet or loaf pan.
Bake uncovered for 45 minutes.
In a saucepan, heat olive oil. Sauté onion until soft, then add garlic.
Stir in tomato paste, cook 1–2 minutes.
Add crushed tomatoes, vinegar, sugar, basil, oregano, salt, and pepper. Simmer 15–20 minutes until thickened.
After 45 minutes of baking, remove meatloaf and spoon some tomato sauce over the top.
Return to oven and bake another 15 minutes, until cooked through (internal temp 160°F / 70°C).
Let rest 10 minutes before slicing. Serve with extra rich tomato sauce spooned over each slice.
