Step-by-Step Instructions for Healthy Powdered Sugar Snowball Donuts
  1. In a small bowl, whisk together 2/3 cup of your favorite milk of choice, 1 1/2 teaspoons of white or cider vinegar, 2 1/2 tablespoons of oil, and 1 teaspoon of pure vanilla extract until smooth.
  2. Preheat your oven to 350°F (175°C) and grease a mini donut pan well with oil or non-stick spray.
  3. In a large bowl, combine 1 cup of spelt, white, or oat flour, 1 1/2 teaspoons of baking powder, 1/2 cup of sugar (or xylitol), and 1/4 teaspoon of salt. Stir to mix well.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined, avoiding overmixing.
  5. Pour the batter into the prepared mini donut pan, filling each cavity about three-quarters full, then bake for 8 minutes.
  6. Remove the pan from the oven and allow the donuts to cool in the pan for a few minutes, then transfer them to a wire rack.
  7. Once cooled, dip the donuts in powdered sugar or sprinkle it over the top for a snowy finish.
