  • 100 g Caster Sugar granulated sugar can be substituted
  • 1 large Medium Egg can use a large egg for more volume
  • 1 tsp Vanilla Extract almond extract can be used instead
  • 100 g Ground Almonds can substitute with almond flour
For Dusting
  • icing sugar Icing Sugar optional for lower sugar intake

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and grease a cupcake tray.
  2. Combine plain flour and butter, rub together until resembling breadcrumbs. Gradually add cold water until a dough forms.
  3. Wrap the dough in cling film and refrigerate for 30 minutes.
  4. Beat together softened butter and caster sugar until light and fluffy. Add the medium egg, vanilla extract, and ground almonds.
  5. Roll out the chilled pastry to 3mm thickness and cut circles for the cupcake tray.
  6. Place pastry circles into each cup, fill with mincemeat, and top with frangipane.
  7. Bake for 20-25 minutes until golden brown.
  8. Cool the pies for a few minutes and dust with icing sugar before serving.
