Preparation
  1. Chop the cabbage into bite-sized pieces and set aside. Dice the onion and bell pepper.
Cooking
  1. In a large skillet, heat over medium heat and add the ground beef. Brown the meat, breaking it into small pieces, until fully cooked (5-7 minutes). Drain excess fat.
  2. Stir in diced onion and bell pepper, cooking until they soften (3-5 minutes).
  3. Add diced tomatoes and taco seasoning, mixing well and simmer for 5 minutes.
  4. Incorporate chopped cabbage and cook for an additional 5 minutes until the cabbage wilts but remains crunchy.
  5. Remove from heat and layer Fritos and cheese on top, allowing the residual heat to melt the cheese.
  6. Serve warm and top with sour cream if desired.
