Preheat your oven to 400°F. Line a large sheet pan with parchment paper for easy cleanup.
In a large bowl, combine olive oil, garlic powder, onion powder, paprika, salt, and black pepper. Add the chicken thighs and toss until they are well coated with the seasoning mixture.
Arrange the seasoned chicken thighs on one side of the prepared sheet pan. On the other side, add the pineapple chunks, sliced bell peppers, and sliced red onion.
In a small bowl, whisk together the soy sauce, honey, rice vinegar, and grated ginger. Drizzle half of this sauce over the chicken and vegetables.
Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F and the vegetables are tender. Halfway through cooking, drizzle the remaining sauce over the chicken and vegetables.
Once done, remove from the oven and let it rest for a few minutes. Garnish with sliced green onions and sesame seeds before serving.
