Ingredients
  

  • 1 pound ground turkey
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 cups mixed vegetables carrots, peas, corn
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • 4 cups mashed potatoes prepared from about 2 pounds of potatoes
  • 1/2 cup shredded cheddar cheese optional

Method
 

  1. Preheat the oven to 400°F.
  2. In a large skillet over medium heat, cook the ground turkey until browned, about 5-7 minutes.
  3. Add the diced onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
  4. Stir in the mixed vegetables, thyme, rosemary, Worcestershire sauce, salt, and pepper. Cook for an additional 5 minutes until the vegetables are tender.
  5. Transfer the turkey mixture to a 9x13 inch baking dish, spreading it evenly.
  6. Top with the prepared mashed potatoes, smoothing them out with a spatula.
  7. If desired, sprinkle shredded cheddar cheese on top.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the filling is bubbly.
  9. Let it cool for 5-10 minutes before serving.
