  • 1 tablespoon chipotle seasoning adjust to taste
  • 3 cloves garlic minced
For Assembling the Tacos
  • 8 tortillas corn or flour
For the Mango Salsa
  • 1 mango diced can substitute with pineapple
  • 1 cup cucumber finely chopped
  • 1/4 cup coriander chopped
  • 1 lime juice fresh is ideal

Method
 

Step-by-Step Instructions
  1. In a large bowl, combine honey, chipotle seasoning, and minced garlic. Add the shrimp, ensuring they’re fully coated in the marinade. Allow to marinate for at least 10 minutes.
  2. Heat a large skillet over medium-high heat and add cooking oil. Once hot, add the marinated shrimp and cook for 3-5 minutes until pink and opaque.
  3. In a medium bowl, combine diced mango, cucumber, coriander, and lime juice. Gently mix to combine.
  4. Warm tortillas in a skillet or microwave until pliable. Spoon cooked shrimp onto each tortilla and top with mango salsa.
  5. Place assembled tacos on a serving platter, serve warm, and enjoy!
