Step-by-Step Instructions for Beef Chile Colorado
  1. Toast the chilies in a dry skillet over medium heat for 2-3 minutes until fragrant. Transfer to a saucepan with chopped onion and minced garlic. Cover with water and simmer for 10 minutes.
  2. Blend the softened chilies, onion, garlic, 1 cup of soaking liquid, cumin, coriander, oregano, and beef broth until smooth, adjusting seasoning to taste.
  3. Cut the beef into 2-inch cubes, season with salt and pepper, and toss with flour.
