Preparation Steps

  2. Mix Dry Ingredients: Combine flour, baking powder, salt, cinnamon, and nutmeg in a separate bowl. Whisk until evenly mixed.
  3. Combine Wet Ingredients: In another bowl, beat the egg, add milk and vanilla extract, and whisk until smooth.
  4. Combine Mixtures: Gently pour the wet mixture into the dry, stir until just combined, then fold in the sugared rhubarb.
  5. Heat Oil: Heat vegetable or canola oil in a deep skillet or pot until it reaches 350°F (175°C).
  6. Fry Fritters: Drop batter by heaping tablespoons into the oil and fry for about 2 minutes on each side until golden brown.
