Preparation Steps
- Prepare Rhubarb: Chop fresh rhubarb into small, bite-sized pieces and toss with sugar in a mixing bowl. Let it sit for about 10 minutes to release juices.
- Mix Dry Ingredients: Combine flour, baking powder, salt, cinnamon, and nutmeg in a separate bowl. Whisk until evenly mixed.
- Combine Wet Ingredients: In another bowl, beat the egg, add milk and vanilla extract, and whisk until smooth.
