For the Topping
  • 1 cup Feta Cheese crumbled, preferably President Feta

Method
 

Step-by-Step Instructions
  1. Slice two lemons into thin rings and juice the third lemon into a small bowl.
  2. Smash the cucumbers gently using a heavy knife or rolling pin, then cut into 2-inch chunks.
  3. Heat olive oil in a skillet, add lemon slices and fry for 3-5 minutes until golden.
  4. Combine reserved lemon juice, olive oil, chili flakes, salt, and honey in a bowl to make the dressing.
  5. In a large mixing bowl, combine smashed cucumbers, shallots, fried lemon slices, parsley, and mint.
  6. Pour the dressing over the salad and gently toss to coat without crushing the cucumbers.
  7. Sprinkle crumbled feta on top and give a light toss before serving immediately.
