Preheat your oven to 400°F (200°C).
Roll out one pie crust on a lightly floured surface. Using a round cutter or a glass, cut out circles about 4 inches in diameter.
Place about 1 tablespoon of chopped peaches in the center of each circle. If desired, sprinkle a little sugar and cinnamon over the peaches.
Fold the pie crust over the filling to create a half-moon shape. Press the edges together to seal, and use a fork to crimp the edges for a decorative touch.
Place the mini pies on a baking sheet lined with parchment paper. If desired, brush the tops with a little melted butter and sprinkle with additional sugar.
Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown.
Allow the pies to cool for a few minutes before serving.
