  • 2 cups canned peach slices drained and chopped
  • 1 package refrigerated pie crusts 2 crusts
  • 1 tablespoon sugar optional, for sprinkling
  • 1 teaspoon cinnamon optional, for sprinkling

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Roll out one pie crust on a lightly floured surface. Using a round cutter or a glass, cut out circles about 4 inches in diameter.
  3. Place about 1 tablespoon of chopped peaches in the center of each circle. If desired, sprinkle a little sugar and cinnamon over the peaches.
  4. Fold the pie crust over the filling to create a half-moon shape. Press the edges together to seal, and use a fork to crimp the edges for a decorative touch.
  5. Place the mini pies on a baking sheet lined with parchment paper. If desired, brush the tops with a little melted butter and sprinkle with additional sugar.
  6. Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown.
  7. Allow the pies to cool for a few minutes before serving.
