Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Prepare a large baking tray lined with parchment paper.
  2. Line a baking tray (approximately 9x13 inches) with parchment paper, pressing it into the corners.
  3. In a large mixing bowl, combine your dried mixed fruit with brandy and allow to soak for a few hours or overnight.
  4. Cream together the softened butter and sugar until light and fluffy. Add eggs one at a time, then stir in the soaked fruit mixture.
  5. Sift together the plain flour and baking powder into the mixture and gently fold them in.
  6. Pour the batter into the prepared baking tray and smooth the top. Bake for about 60 minutes, or until a toothpick comes out clean.
  7. Let it cool for 15 minutes in the tray before transferring to a wire rack to cool completely. Decorate with marzipan, fondant, and edible decorations.
