- Preheat your oven to 350°F (175°C). Prepare a large baking tray lined with parchment paper.
- Line a baking tray (approximately 9x13 inches) with parchment paper, pressing it into the corners.
- In a large mixing bowl, combine your dried mixed fruit with brandy and allow to soak for a few hours or overnight.
- Cream together the softened butter and sugar until light and fluffy. Add eggs one at a time, then stir in the soaked fruit mixture.
