- Combine oats, salt, and maple syrup in a large mixing bowl. Pour in 1 cup of boiling water to hydrate the oats and let it sit for about 10 minutes.
- After resting, add 3/4 cup of cold water. Sprinkle instant yeast evenly on top and let it sit for 5 minutes until frothy.
- Gradually incorporate flour into the oat mixture until a sticky dough forms. Lightly knead if tacky.
- Cover and let rise in a warm area for 2 to 3 hours until doubled in size.
- Punch dough down, transfer to a floured surface, shape into a loaf, and place in a buttered loaf pan coated with oats. Cover and let rise for 45 minutes.
- Preheat oven to 375ºF (190ºC).
- Bake loaf for approximately 45 minutes until golden brown and hollow when tapped.
- Remove from the oven, cool in the pan for 10 minutes, then on a wire rack for at least 30 minutes before slicing.
