  • 1 teaspoon salt use kosher or sea salt for best results
  • 1/4 cup maple syrup can substitute with honey or agave syrup
  • 2 teaspoons instant yeast active dry yeast can be used with adjusted activation time
  • 3 cups whole wheat flour can use all-purpose flour for a lighter texture
  • 1 cup water should be at correct temperature to activate yeast

Method
 

Step-by-Step Instructions
  1. Combine oats, salt, and maple syrup in a large mixing bowl. Pour in 1 cup of boiling water to hydrate the oats and let it sit for about 10 minutes.
  2. After resting, add 3/4 cup of cold water. Sprinkle instant yeast evenly on top and let it sit for 5 minutes until frothy.
  3. Gradually incorporate flour into the oat mixture until a sticky dough forms. Lightly knead if tacky.
  4. Cover and let rise in a warm area for 2 to 3 hours until doubled in size.
  5. Punch dough down, transfer to a floured surface, shape into a loaf, and place in a buttered loaf pan coated with oats. Cover and let rise for 45 minutes.
  6. Preheat oven to 375ºF (190ºC).
  7. Bake loaf for approximately 45 minutes until golden brown and hollow when tapped.
  8. Remove from the oven, cool in the pan for 10 minutes, then on a wire rack for at least 30 minutes before slicing.
