Allow sauce to simmer for 30 minutes until thickened.
  2. Cook Noodles: Bring a large pot of salted water to a boil. Add lasagna noodles and cook according to package instructions until al dente, which usually takes 8-10 minutes. Drain noodles and set aside in a single layer on a clean kitchen towel.
  3. Mix Ricotta Filling: In a medium mixing bowl, combine ricotta cheese, egg, 2 cups of shredded mozzarella, and half of the grated Parmesan cheese. Mix until smooth and creamy.
