Method
- Juice the lime and prepare all ingredients. If using homemade raspberry syrup, simmer and strain it ahead of time.
- Add tequila, passionfruit juice, raspberry syrup, lime juice, simple syrup (if using), and egg white or aquafaba to a cocktail shaker.
- Dry shake (no ice) for 15–20 seconds to build a strong foam.
- Add ice to the shaker and shake again vigorously for another 15–20 seconds.
- Double strain the cocktail into a chilled coupe or martini glass.
- Garnish with fresh raspberries, a lime wedge, or a passionfruit slice.
- Serve immediately and enjoy the frothy, fruity flavor.
Notes
Dry shaking first is key for achieving a silky foam texture.
Simple syrup is optional and can be reduced or omitted if your juices or raspberry syrup are sweet enough.
For a vegan cocktail, aquafaba (chickpea water) provides a great substitute for egg white.
