- Start by placing the fresh lemons in a colander. Pour boiling water over them to remove any wax residue and then rinse them in cold water to cool.
- Once the lemons have cooled, cut them into quarters lengthwise, carefully removing any seeds. Then, slice the lemon quarters thinly.
- Take your fresh ginger and peel it carefully using a spoon or peeler. Then, grate or finely chop it.
- In a sterilized jar, start by layering half of the thin lemon slices and half of the grated ginger on the bottom. Drizzle half of the honey over this mixture.
- Repeat the layering with the remaining lemon slices and ginger, followed by the rest of the honey. Seal the jar tightly and refrigerate overnight.
- When you're ready to enjoy, take the jar from the refrigerator and give it a shake or stir to mix everything up. In a cup, add a spoonful of the mixture and fill the cup with freshly boiled water.
- Allow the tea to steep for a few minutes. Taste and adjust with more honey or lemon if desired.
