Method

Instructions
  1. Begin by dicing the yellow onion and mincing the garlic cloves. Gather the remaining ingredients.
  2. In a large bowl, combine the ground beef with an egg, breadcrumbs, salt, pepper, dried onion, and Dijon mustard. Mix gently until just combined.
  3. Divide the mixture into four equal portions and shape each into a patty about ¾ inch thick.
  4. Heat a large skillet over medium-high heat, add olive oil and butter. Sear the patties for about 5 minutes on each side.
  5. In the same skillet, add diced onions and minced garlic, season with salt, pepper, and thyme. Sauté until onions are soft.
  6. Pour in white wine to deglaze, scraping up browned bits, and simmer for about 2 minutes.
  7. Stir in heavy cream, bring to a gentle boil, then add Parmesan and horseradish, stirring until smooth.
  8. Return the patties to the skillet and simmer for about 5 minutes, allowing flavors to meld.
  9. Garnish with chopped chives and serve immediately with mashed potatoes or buttered noodles.
