Step‑by‑Step Instructions
  1. Preheat your oven to 410°F (210°C) and line baking sheets with silicone liners.
  2. In a stand mixer, cream together the softened butter and sugar on medium speed for about 3 minutes.
  3. Add the eggs one at a time, mixing thoroughly after each, then add vanilla and food coloring.
  4. In a separate bowl, whisk together cake flour, all-purpose flour, cocoa, baking soda, cornstarch, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  6. Fold in chocolate chips on low speed until evenly distributed in the dough.
  7. Cover dough with plastic wrap and chill in the refrigerator for approximately 20 minutes.
  8. Scoop approximately 3.5 oz of dough for each cookie and roll into balls.
  9. Flatten each dough ball slightly and bake for 8-11 minutes, letting cool on the baking sheet.
  10. Prepare icing by mixing powdered sugar and milk until you achieve a thick consistency.
