Step-by-Step Instructions
  1. Preheat your oven to 200°C (390°F) and prepare a baking sheet lined with parchment paper.
  2. Cut the puff pastry into six rectangles and prick surfaces with a fork. Brush with egg wash and sprinkle with sea salt.
  3. Bake in the preheated oven for 15-18 minutes until golden. Cool on a wire rack.
  4. Whisk together ricotta cheese, lemon zest, lemon juice, olive oil, salt, and pepper until smooth. Transfer to a piping bag.
  5. Assemble by layering pastry, lemon-ricotta whip, and prosciutto in a serving platter until finished with a pastry layer.
  6. Garnish with thyme or microgreens and serve immediately.
