Step-by-Step Instructions

  3. Roll the pastry tightly from one end to the other to create a log shape. Wrap in plastic wrap and refrigerate for at least 1 hour or freeze for 30 minutes.
  4. Carefully slice the chilled pastry log into 1/4-inch thick pieces. Place on a parchment-lined baking sheet with space between each slice.
  5. Preheat oven to 400°F (200°C). Bake palmiers for 12-15 minutes until golden brown and flaky.
