- Lightly dust your work surface with flour. Roll out one sheet of defrosted puff pastry to about 1/8 inch thick.
- Spread 1 tablespoon of cream-style horseradish over the pastry. Layer with shredded Gruyère cheese, caramelized onions, crumbled bacon, and fresh thyme. Press down gently.
- Roll the pastry tightly from one end to the other to create a log shape. Wrap in plastic wrap and refrigerate for at least 1 hour or freeze for 30 minutes.
- Carefully slice the chilled pastry log into 1/4-inch thick pieces. Place on a parchment-lined baking sheet with space between each slice.
- Preheat oven to 400°F (200°C). Bake palmiers for 12-15 minutes until golden brown and flaky.
