  • 1 cup rice flour
  • 2 tablespoons tapioca starch
  • 2 cups water
  • 1 teaspoon salt
  • 1 tablespoon vegetable oil
  • 8 ounces cooked shrimp chopped
  • 2 green onions finely sliced
  • Soy sauce for serving

Method
 

  1. In a mixing bowl, combine the rice flour, tapioca starch, salt, and vegetable oil. Gradually add water while whisking until the mixture is smooth and free of lumps. Let it rest for 30 minutes.
  2. Prepare a steamer by bringing water to a boil. Line a flat, heatproof dish or a shallow pan with parchment paper.
  3. Pour a thin layer of the batter into the prepared dish, just enough to cover the bottom. Sprinkle half of the chopped shrimp and green onions evenly over the batter.
  4. Place the dish in the steamer and cover. Steam for about 5-7 minutes, or until the batter is set and translucent.
  5. Carefully remove the dish from the steamer and let it cool for a minute. Use a spatula to gently lift the edges and roll the cheung fun into a log.
  6. Repeat steps 3-5 with the remaining batter, shrimp, and green onions.
  7. Slice the rolled cheung fun into bite-sized pieces and serve with soy sauce drizzled on top.
