Cooking Steps
- Heat the olive oil in a large pot over medium heat.
- Sauté chopped onion and minced garlic for 3-5 minutes until translucent.
- Add chopped bell pepper and cook for an additional 2-3 minutes.
- Mix in chopped tomatoes and cook until softened, about 5 minutes.
- Sprinkle in smoked paprika and saffron, stirring for 30 seconds.
- Incorporate diced potatoes, stirring well to coat.
