Cooking Steps
  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté chopped onion and minced garlic for 3-5 minutes until translucent.
  3. Add chopped bell pepper and cook for an additional 2-3 minutes.
  4. Mix in chopped tomatoes and cook until softened, about 5 minutes.
  5. Sprinkle in smoked paprika and saffron, stirring for 30 seconds.
  6. Incorporate diced potatoes, stirring well to coat.
  7. Pour in fish stock or water, bring to a boil then reduce to a simmer for 15 minutes.
  8. Add pieces of firm white fish and cook for 5-7 minutes until flakey.
  9. Stir in green peas and cook for another 2 minutes.
  10. Season with salt and pepper to taste.
  11. Ladle into bowls, garnish with parsley and serve with lemon wedges.
