- In a large mixing bowl, combine the ground turkey, breadcrumbs, green onions, cilantro, minced garlic, grated ginger, soy sauce, lime juice, sesame oil, salt, and pepper. Mix until just combined.
- Divide the mixture into four equal portions and shape each portion into a patty about ¾ inch thick.
- Preheat your grill or skillet on medium-high heat for about 5 minutes. Add oil to prevent sticking if using a skillet.
- Cook the patties for 5 to 6 minutes on each side until golden brown and cooked through, reaching an internal temperature of 165°F (74°C).
- While patties are cooking, whisk together peanut butter, soy sauce, lime juice, honey, and sriracha. Thin with warm water until smooth.
- To assemble, spread peanut sauce on the bottom of each bun, add a patty, drizzle more sauce, and layer on vegetables before topping with the bun.
- Serve immediately with extra peanut sauce on the side.
