Step-by-Step Instructions
  1. Season the steaks with salt and pepper on both sides and let them rest at room temperature for about 15 minutes.
  2. Heat a large skillet over medium-high heat and add olive oil until shimmering.
  3. Sear the steaks for 3-4 minutes on each side until a golden crust forms, then remove and let rest.
  4. In the same skillet, reduce heat to medium, add butter, and sauté minced garlic for about 30 seconds until fragrant.
  5. Deglaze the pan with bourbon, scraping up browned bits, and simmer for 2-3 minutes.
  6. Whisk in heavy cream and let it simmer to thicken.
  7. Add Worcestershire sauce, smoked paprika, and cayenne pepper, simmering for 5-6 minutes.
  8. Return the steaks to the skillet, spoon sauce over them, and cook for an additional 2-3 minutes.
  9. Serve the steaks with extra sauce and garnish with fresh thyme or parsley.
