Preparation Steps
  1. In a mixing bowl, whisk together sweet chili sauce, soy sauce, honey, lime juice, and ground ginger until smooth and well combined.
  2. Place halved chicken breasts into a resealable bag or shallow dish and pour in half of the prepared marinade.
  3. In a skillet over medium-high heat, heat 1 tablespoon of olive oil until shimmering.
  4. After the chicken is seared, reduce the heat and pour the remaining marinade over the chicken.
  5. Transfer the chicken and sauce to your pressure cooker and cook for 10 minutes.
  6. Once the cooking time is complete, perform a quick release or allow for a natural release.
  7. Transfer the Thai Sweet Chili Chicken to a serving platter and garnish with sliced green onions and lime wedges.
