In another bowl, beat the eggs and then add the vanilla extract. Combine the wet ingredients with the dry ingredients and stir until just mixed.
Pour the batter over the apples and pecans in the pan, spreading it evenly.
Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Allow the pie to cool in the pan for 10 minutes, then invert it onto a serving plate. Let it cool slightly before serving.
