  • 1/2 cup Brown Sugar coconut sugar can be used
  • 1/4 cup Granulated Sugar
  • 1 tablespoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 tablespoon Cinnamon opt for freshly ground
Wet Mixture
  • 1/2 cup Butter can swap with coconut oil
  • 1 large Egg can use a flax egg
  • 1/2 cup Milk plant-based milk works well
Gooey Layer
  • 1 cup Hot Water pour gently over the batter

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish.
  2. In a large bowl, whisk together the dry ingredients until well-blended.
  3. In a separate bowl, melt the butter and stir in the egg and milk until fully combined.
  4. Pour the wet mixture into the dry ingredients and gently stir until just combined.
  5. Spoon the batter into the prepared baking dish and smooth the top.
  6. Carefully pour hot water over the batter in the baking dish without mixing.
  7. Bake for about 40 minutes, until the top is golden brown and firm to the touch.
  8. Let cool for a few minutes before serving warm.
